Foxtail Millet Powder – Cooking Recipes
1. Foxtail Millet Porridge (Sweet)
Ingredients
- Foxtail Millet Powder – 50 g
- Water – 250 ml
- Milk – 100 ml
- Palm jaggery – 25 g
- Cardamom powder – a pinch
Method
- Mix millet powder with water without lumps.
- Cook on low flame for 8–10 minutes.
- Add milk and palm jaggery.
- Sprinkle cardamom powder and serve hot.
2. Foxtail Millet Kanji (Savory)
Ingredients
- Foxtail Millet Powder – 50 g
- Water – 300 ml
- Buttermilk – 100 ml
- Salt – to taste
- Cumin powder – ¼ tsp
Method
- Cook millet powder in water until thick.
- Allow to cool slightly.
- Add buttermilk, salt, and cumin powder.
- Mix well and serve.
3. Foxtail Millet Dosa
Ingredients
- Foxtail Millet Powder – 1 cup
- Rice flour – ½ cup
- Curd – ½ cup
- Water – as needed
- Salt – to taste
Method
- Mix all ingredients into a smooth batter.
- Rest for 20 minutes.
- Pour thin dosas on a hot tawa.

4. Foxtail Millet Adai
Ingredients
- Foxtail Millet Powder – 1 cup
- Onion – 1 finely chopped
- Green chilli – 1 chopped
- Curry leaves – few
- Salt – to taste
Method
- Mix all ingredients with water to form a thick batter.
- Spread on a hot tawa.
- Cook both sides with a little oil.
- Serve hot.
5. Foxtail Millet Chapati
Ingredients
- Whole wheat flour – 1 cup
- Foxtail Millet Powder – ½ cup
- Salt – ¼ tsp
- Water – as needed
Method
- Combine all ingredients and knead into a soft dough.
- Rest for 15 minutes.
- Roll and cook on a hot tawa.
6. Foxtail Millet Upma
Ingredients
- Foxtail Millet Powder – 1 cup
- Onion – 1 chopped
- Green chilli – 1
- Mustard seeds – ½ tsp
- Curry leaves – few
- Water – 2½ cups
Method
- Roast millet powder lightly.
- Prepare tempering with mustard seeds and curry leaves.
- Add onion and sauté.
- Add water and bring to a boil.
- Stir in millet powder slowly.
- Cook until soft and fluffy.
7. Foxtail Millet Laddu
Ingredients
- Foxtail Millet Powder – 1 cup
- Palm jaggery powder – ¾ cup
- Ghee – 3 tbsp
- Cardamom powder – ¼ tsp
Method
- Roast millet powder until aromatic.
- Add jaggery and cardamom powder.

Method
