Bhaliya Wheat Flour (Emmer Wheat Flour / Khapli Wheat Flour) is excellent for rotis, dosas, porridges, baked goods, and traditional sweets. It has a rich nutty flavor and is commonly used in healthy diets.
1. Bhaliya Wheat Roti
Ingredients
- Bhaliya Wheat Flour – 2 cups
- Salt – ½ tsp
- Warm water – as needed
Method
- Mix flour and salt.
- Add water gradually and knead into a soft dough.
- Rest for 20 minutes.
- Roll into rotis and cook on a hot tawa.
- Serve with curry or dal.
2. Bhaliya Wheat Dosa
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Rice flour – ¼ cup
- Curd – ¼ cup
- Water – 1½ cups
- Salt – to taste
- Cumin seeds – ½ tsp
Method
- Mix all ingredients into a thin batter.
- Rest for 15 minutes.
- Pour onto a hot tawa and spread thinly.
- Cook until crisp and serve.
3. Bhaliya Wheat Porridge
Ingredients
- Bhaliya Wheat Flour – 50 g
- Water – 250 ml
- Milk – 100 ml
- Palm jaggery – 25 g
- Cardamom powder – a pinch
Method
- Mix flour with water.
- Cook on low flame for 8–10 minutes.
- Add milk and palm jaggery.
- Simmer for 2 minutes and serve.
4. Bhaliya Wheat Vegetable Adai
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Onion – 1 chopped
- Grated carrot – ¼ cup
- Green chilli – 1 chopped
- Curry leaves – few
- Salt – to taste
Method
- Mix all ingredients with water to make a thick batter.
- Spread on a tawa.
- Cook both sides with a little oil.
- Serve hot.
5. Bhaliya Wheat Sweet Pancake
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Jaggery syrup – ½ cup
- Banana – 1 mashed
- Cardamom powder – ¼ tsp
Method
- Mix all ingredients into a thick batter.
- Pour small portions on a tawa.
- Cook both sides until golden brown.
- Serve warm.
6. Bhaliya Wheat Cookies
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Butter – 75 g
- Palm sugar – ½ cup
- Cardamom powder – ¼ tsp
Method
- Mix all ingredients into a dough.
- Shape cookies.
- Bake at 170°C for 15–18 minutes.
7. Bhaliya Wheat Laddu
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Palm jaggery powder – ¾ cup
- Ghee – 3 tbsp
- Cardamom powder – ¼ tsp
Method
- Roast flour until aromatic.
- Add jaggery and cardamom.
- Mix with warm ghee.
- Shape into laddus.
8. Bhaliya Wheat Halwa
Ingredients
- Bhaliya Wheat Flour – 1 cup
- Ghee – 3 tbsp
- Palm jaggery – ¾ cup
- Water – 2 cups
Method
- Roast flour in ghee until golden.
- Dissolve jaggery in water and strain.
- Add syrup slowly while stirring continuously.
- Cook until the mixture thickens.
9. Bhaliya Wheat Vegetable Paratha
Ingredients
- Bhaliya Wheat Flour – 2 cups
- Boiled potato – 2
- Coriander leaves – 2 tbsp
- Cumin powder – ½ tsp
- Salt – to taste
Method
- Prepare dough using the flour.
- Make a potato filling with spices.
- Stuff, roll, and cook on a tawa.
- Serve with curd or pickle.
10. Bhaliya Wheat Millet Health Mix Drink
Ingredients
- Bhaliya Wheat Flour – 2 tbsp
- Milk or water – 250 ml
- Palm jaggery – 1 tbsp
- Dry ginger powder – a pinch
Method
- Mix flour in water.
- Cook for 5–7 minutes.
- Add jaggery and dry ginger.
- Serve warm.
